Going Above & Beyond

I absolutely love when you meet people who go above and beyond to do their job & do it well. I like it even more when it’s someone who is helping me fight this Infertility battle!!

Yesterday I went for my weekly acupuncture with my awesome acupuncturist, and the first thing I see is that she has bought a copy of The Infertility Cure, which is a book I referenced at my first appointment about a month ago as being awesome and informative and key in me deciding to try out the eastern medicine way of doing things. Not only had she bought it, but you could see lots of page markers and highlights and notes in the margins – she LOVED the book, and it made me feel good that I was reading a quality book and it wasn’t a crappy recommendation. At any rate, for those of you who have read it, while she had the needles in me, she went through the extensive checklist in the book – just to make sure she had covered everything.

Basically, it just reaffirmed the fact that I have a blood deficiency & yin deficiency. Exactly what we’ve been working on treating!

After my appointment was over, I was getting ready to leave and she said, Hey – do you have time to pick some fresh greens? I have a ton ready right now & it’s at it’s most flavorful right now!

Um, YES?!!

She promptly went out and cut me a bunch of chard because I had a dish I wanted to try with that. Here it is!

I made it with fresh swiss chard from her garden, fresh tomatoes, fresly grated parmesan, and gluten free pasta. My husband and I both LOVED it – delciousness!!

  1. looks tasty. i've never had chard. should i plant some next year?

  2. Definitely! I just googled some recipes and there were lots of tasty ones. In this one I cooked up some garlic w/olive oil and red pepper flakes, then tossed in the chard with a bit of water and S&P and covered that for 5 min, then added tomatoes for another 3 min. Voila! Easy peasy and delicious!

  3. Yum! That pasta looks delicious. 🙂

I'm so impressed….I've gained so much weight during this time in my life b/c it's just easier to eat what the girls are eating rather than cooking something totally different for myself…what can I say, I'm LAZY…but i think I could whip this up & the girls could learn to like it! ;)So happy you are trying different approaches to your health!
