Menu for the Week… Take #1

Like Canis Majoris said in her post, my breakfasts & lunches are pretty boring (read: routine, healthy, don’t take much thought) so I’m not going to designate what days I eat what.

Breakfast is always my fav omelet in the whole wide world (2 egg whites, 1 whole egg, 1 oz. feta or goat cheese, 1/2 roma tomato, 1.5 oz avocado, 1 c. steamed spinach) or Quineuvos Rancheros from Girl’s Gone Child (quinoa, egg, avocado, cilantro, salsa).

Lunch is always a basic chef salad (greens, 3 oz deli meats, 1/2 oz cheese, 10g walnuts, yogurt parmesan dressing), quinoa salad on greens (quinoa, greens, goat cheese, blueberries, walnuts, balsamic), or sometimes leftovers (if my husband didn’t bring them to work).

Snacks are fresh fruit, applesauce, string cheese sticks, almonds, or cottage cheese (though I’ve been doing less of the cheese thing lately).


That being said, here is what I’m laying out for dinners for the week. Hopefully this will help to keep me from munching on cheetos (my weakness lately!) and make it less stressful to be throwing something together when I get home from work. This is from memory of what we have in the fridge, so hopefully it’s about right…

Dinners for the Week


Monday
Quinoa stuffed bell peppers from Le Petit Pierogi & Steamed Broccoli

*Update* I used 2 whole peppers instead of just 1 and added some cayenne and red pepper flakes – we like spicy food! We were also out of broccoli, so canned green beans it was. Oops!

Tuesday
Bok Wok Teriwak from Girl’s Gone Child (basically quinoa with tofu, tempeh, and greens)
(First time trying this!)

*Update* This. Was. Awesome. DH and I were both nervous b/c neither of us had even tried tempeh before, but this dish was great. We used the “very very teryiaki” that GGC recommended and LOVED it!

Wednesday
Hot dogs, gluten-free pasta, and Olathe Sweet sweet corn.
Yeah, I know, hot dogs aren’t great, but we had them for a BBQ last weekend and I don’t want the rest of the bag to go to waste. Plus, it’s summer!

*Update* My picture kept rotating, so I didn’t bother inserting it (damn you blogger!). I ended up making “mashed cauliflower” instead of pasta (it’s SUPER good & good for you – let me know if you want the recipe).

Thursday
Chicken Caesar salad (with yogurt parmesan caesar dressing).
Light on the dressing for me. Drowning in dressing for the hubby. LOL

*Update* I ate exactly this. DH had sesame chicken from the Chinese place. Lucky him. 🙂

Friday

Turkey Meatloaf with Veggies from Ana at Getting Help Making a Baby
(I’m excited to try this out for the first time!)
*Update* We ended up going over to a friend’s house for dinner (she has a 4mo old and 18mo old), so nachos it was. I ate in moderation though! Made the meatloaf on Sunday.

Saturday
No idea – we’re going up to Tellu.ride for dinner with some friends of ours that are celebrating their 6 year anniversary and spending the night at the Peaks with them. I can’t wait!! I’m hoping we’ll go out for sushi – depends if we can talk my hubby into it. He likes it, but says it never makes him full. I think I’ll force feed him a PB&J first. 😉

*Update* Weekend trip got cancelled. Ended up eating a grilled chicken sandwich & veggies after rock climbing with friends instead.

Sunday
Chicken Kebabs (skewers of chicken, artichoke hearts, bell peppers, onions, and tomatoes) w/corn & gluten-free pasta of some sort.

*Update* Made Ana’s Turkey Meatloaf, and it was AWESOME. Didn’t have all the stuff for the veggies, so we just did green beans & some egg salad with it that DH loves. We will totally be making that again!!

  3. Sabrina – I've always wondered what your real name was! LOL. If you email me, I can email you the tweaks I've done to make my breakfasts all around 300 calories. That quineuvos rancheros is AWESOME when I get around to making it (it's really easy), but I'm just a girl of habit so I tend to eat that omelet 6 days out of 7. 🙂

  5. Those sound delicious! Planning out is sooo much better, if we do not plan we just eat crap.How is quinoa? I saw you had it in a few meals and I have been seeing it more on the food network. I wondered how it tasted as I have thought about using it for lunch.Also, I make turkey meatloaf and sometimes add spinach and feta in it which helps it not only not dry out but it tastes AWESOME! I also like to make one with some sundried tomato pesto and a little bit of fresh mozz cheese. Again, very good! (just some ideas…as I will be taking a few of these!)

  6. TOTALLY off topic from your post but in response to your MN accent comment I had to let you know that I actually lived in Denmark for 6 months and learned the language while there. Due to my MN O's I had the best pronunication of anyone in the class! It actually came in handy! 🙂

  9. @Wrestling Kitties – we've just started eating quinoa the last month or so b/c I'm trying to cut down on gluten, and so far we both love it. GGC has a lot of great recipes, and I'm slowly finding others as well. You can substitute it as pasta for almost anything in recipes, or you can substitute it for the ground meat in a lot of dishes as well (like the quinoa stuffed peppers on monday night). It's really versatile and really good for you! Your turkey meatloaf ideas sound awesome – I'll definitely try them out! @suchagoodegg – I'm lucky that my husband pretty much likes everything I good. If I'm gone, he lives on PB&J, hot dogs, and frozen pizzas, but he really does like to eat healthy when I make it for him. I'm trying to get better about staying away from processed foods (without making our grocery bill huge). It's a work in progress. 🙂
