Weekends are always the hardest time for me to stay on track with my fitness goals, and that fact is just intensified over the holidays. I’m guessing I’m not alone in this. 😉
At any rate, last Saturday we were invited to a “Cookies and Cocktails” holiday party, and though I definitely ate and drank too much, it was SO much fun! There were a ton of people there who all brought cookies & drinks for the contest, and we even had actual judges to whom you presented your concoctions. It was a total riot! There were probably 15+ entries in each category, and I may not have won the contest, but I was pretty proud of my contributions to the party anyway. They were both healthy AND delicious!
The Cocktail – a Grapefruit Sparkle Spritzer – 130 calories
Mix 2 ounces vodka (no weak drinks for this gal) with 1c. sparkling water, a dash of grapefruit juice, and a bit of Sparkling Ice Raspberry Lemonade. You could skip the Sparkling Ice, but I had it on hand because those are my normal vodka mixers, and I just loved the added flavor.
Garnish the drink with fresh mint and raspberries frozen in ice cubes.
The Cookies – Raspberry Oatmeal – 98 calories
I found the recipe for these Raspberry Oatmeal Cookies over at Amy’s Healthy Baking, and they were absolutely fantastic! The kids crushed them too. 🙂 She said they make 15, but I made 16 cookies, and based on the exact brands of ingredients I used, they were 98 calories apiece.
The cookies were made with no refined sugar, refined flour, or butter – just ingredients like coconut oil, whole wheat flour, oats, honey, and fresh raspberries. I probably would have preferred them cooked a little longer, but my husband and kids (and the judges) loved the gooey softness of them. I loved the pop of flavor from the fresh raspberries!
