Slow Cooker Chicken Fajitas

In the winter I am all about crock pot meals, so when I can tweak one to make it work with the nutrition macros I’m aiming for, all the better! The follow recipe for slow cooker chicken fajitas is 21 Day Fix approved, which makes it easy for me to insert it into the week when I’m working on meal planning.

21 Day Fix Approved Crock Pot Chicken Fajitas – 8 Servings

  • 8 REDS: 2 lbs Chicken (I’ve found roughly 4oz chicken = 1 red container)
  • 3 GREENS: Bell Peppers, sliced – 1 red, 1 yellow, 1 green
  • 1 GREEN: 1 White Onion, sliced
  • 1 GREEN: 1 Can Rotel (diced tomatoes & jalapeño peppers)
  • FREE: 3 Tbsp Smoky Southwestern Seasoning from 21DF book*
  • FREE: 4 cloves garlic
  • FREE: Lime Juice
  • 8 YELLOWS: Tortillas (One 6” whole wheat tortilla or 2 small corn tortillas = 1 yellow)

Optional Toppings:

  • BLUE: Shredded Cheese, Avocado/Guac (I use ½ container of each)
  • RED: Sub 1 Tbsp Greek Yogurt for sour cream
  • GREEN: Romaine/Spinach/Mixed Greens/Whatever you use – the darker the better
  • FREE: Cilantro

Container Breakdown Per Serving:

1 red, 1 green, 1 yellow, 1 blue

To cook:

  • Layer ingredients into large crock pot:
    • 1/2 of the sliced peppers
    • 1/2 of the sliced onion
    • chicken breasts
    • seasoning
    • garlic, chopped
    • lime juice
    • 1 can of Rotel (or any diced tomatoes)
    • 1/2 of the sliced peppers
    • 1/2 of the sliced onion
    • more lime juice

  • Cover and cook on high for 3 hours
  • Remove chicken to slice, then return to crock pot
  • Mix together & let juices all soak in for 10 minutes.
  • Remove and serve!

I like mine heavier on the fresh greens with 2 hard shell corn tortillas crumbled into it (almost like a fajita salad), but my husband likes it heavier on the fillings and assembled like traditional fajitas on soft whole wheat tortillas. It’s a delicious, versatile meal the whole family can enjoy. I love it!

*Smoky Southwestern Seasoning:

  • 1 Tbsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. coriander
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. smoked paprika
  • 1 tsp. sea salt

    1. It was delicious! This was definitely a huge batch – I’ll probably half it next time so we don’t have so many leftovers, though I had a fajita for lunch today and it was still great. 🙂

  2. I love crockpot fajitas!! I’ve only had a crockpot for a couple of months but it is great! The first two weeks I used it almost everyday. I’ll admit I haven’t used it in a while but I actually have chicken fajitas planned for tomorrow. One of my fav meals! I am excited to see if anyone else shares other favourites because I need suggestions! 🙂

    I go in major crockpot spurts. It’s so much easier once you do the work! It’s just the doing the work that gets passed by 🙂 My favorite favorite crockpot go-to probably doesn’t fit very well with your fitness goals; so, I’ll keep it to myself. But it’s mostly based on beef stew with apple juice. You could make that work in some way, I’m sure.

    1. I honestly never weighed it – just eyeballed 1/8 of the crockpot.
