Greek Yogurt Spicy Bacon Deviled Eggs

So, it’s football season. Football season = lots of unhealthy appetizers & delicious beer in my world, but every once in awhile I at least TRY to adjust my recipes to make them a little better for you. 🙂

Yesterday I was about to whip up a batch of spicy deviled eggs to bring to a playoff party when I realized I was out of mayo. DING DING DING! Fage Plain Greek Yogurt to the rescue! One thing I’ve learned from my Beachbody programs is to always check the labels, even on so-called “healthy” foods. Added artificial sweeteners and such can drastically change the nutritional benefit of your foods, and the plain Fage Greek yogurt beats the other brands in my grocery store aisle hands down.

At any rate, I decided to give it a go, and here is what I came up with. Everyone RAVED about them and had no idea I had subbed yogurt for the mayo. Now THAT’S what I call a win!

Healthy Hard Boiled Eggs made with Greek Yogurt instead of mayo!

Spicy Bacon Deviled Eggs – 21 Day Fix Proportions Included!

  • 1 dozen hard boiled eggs (6 Red)
  • 3 Tbps Siracha hot sauce (FREE)
  • 1/2 cup Plain Greek Yogurt (1 Red)
  • 2 tsp Dijon mustard (FREE)
  • S&P to taste (FREE)
  • 2 slices bacon* (1 RED)

Hard boil your eggs with firm yolks (be careful not to overcook! I have an old 7 egg version of this cooker and it is AMAZING – perfectly cooked eggs every time). Drain the hot water (if you cooked in a pot the old fashioned way) and instantly cool the eggs under cold running water in a bowl of ice. The older eggs the better as that also helps them peel better! Peel the cooled eggs.

Slice the eggs lengthwise and put the yolks into a bowl. Add the rest of the ingredients (except the bacon!) to the bowl of yolks and mash everything together with a fork.

Spoon mixture into a plastic sandwich bag, seal, and cut the bottom corner off to create a homemade piping bag. Pipe the mixture into the egg white halves (you can get fancy with this if you want – I obviously did not!) and then garnish with a little piece of bacon on each egg.

Servings are sort of nebulous when it comes to appetizers in my opnion, but just to give you an idea:

1.5 eggs (so 3 deviled egg halves) = 1 red = 145 calories

*21 Day Fix specifies turkey bacon, but ew. I can’t do that. I figure a little bit of regular pork bacon in moderation keeps me happy, so that’s what I go with! I figure 2 pieces of pork bacon instead of 4 pieces of turkey bacon won’t kill anyone. 😉 My husband had cooked up bacon a few days ago and there were 2 leftover slices in the fridge, so that worked perfectly to add them to these deviled eggs as the crispy garnish!

My husband also requests that I add a little bit of horseradish sauce to them instead of Dijon, so I’ll be giving that a try next time! What’s your favorite ingredient to use to freshen up the old standard deviled egg recipe?
